i love chicken pot pie. i came up with this recipe by combining a few components from others to come up with an easy, yummy version:
- 2T butter
- 1/4 onion (adj for personal taste)
- 4T flour
- 2 cans chicken stock
- 3c potatoes (any variety)
- 2c cooked chicken
- 1 bag frozen veggies
- rubbed sage & crushed rosemary and salt & pepper to taste
- 1 1/2 cups bisquick
- 1c milk
- 2T butter
saute onion in the butter until translucent
add flour
add chicken stock slowly - working out any lumps in the flour
add diced (uncooked) potatoes and cook until potatoes are soft
add chicken, sage, rosemary, salt and pepper and defrosted veggies
pour into casserole dish
combine bisquick and milk and pour over casserole
melt butter and pour on top of bisquick
cook in oven for 30 minutes at 350 degrees

*note: i cook a bunch of chicken ahead of time and separate it into freezer bags so i can prepare quick and easy home cooked meals like this one. this recipe takes about an hour to prepare - including cooking time.
